“Obsessed with food in all the right ways” – Sarah May Edelman
Discovering Holistic Health
Sarah is the recipient of the ACHS Adult Skills Education Program Scholarship (ASEP). Sarah began her studies at ACHS in the Fall of 2021 after earning her Bachelor's degree in Sustainable Agriculture and Food Production. She has been immersed in food and nutrition studies for the last decade. Sarah knew that she wanted to take her education further upon learning of health issues and nutrition needs within her family in 2017. Sarah is currently enrolled in the Diploma of Holistic Health Program at ACHS, and in conjunction with her studies in the diploma program, she also completed the ACHS Integrative Cannabis Specialist™ Micro-Credential program.
Sarah has plans to start her own holistic nutrition and cannabis consulting business upon graduating. She has a vision of offering a community garden to her clients where they can procure fresh foods.
Experience with ACHS
Sarah enjoys the flexibility that online classes can offer. She can work on her assignments at a time that is convenient for her throughout the week. She also appreciates the availability of accommodations that help her succeed.
A takeaway from her education here at ACHS is the practical knowledge that she learned in her Anatomy and Physiology classes, which she will be able to apply to real-world scenarios.
Her advice to prospective students that are thinking about getting started is, “just go for it! It may seem scary at first, but once you’re in it, you’ll wonder why it took you so long to get started. Trust your gut, even when you feel uncomfortable. Your future self will thank you.”
Sarah shared that she was excited to receive the ACHS Adult Skills Scholarship because “this will help to achieve her goals, it allows her to graduate on time, and stress less about financials.”
Sarah is looking forward to graduating in December 2023 and plans to make a trip from Vermont to Oregon to participate in the 2024 ACHS Graduation Ceremony.
